This year we decided to have a Unicorn Theme for Blake’s birthday.
7 years old is a big milestone in Filipino culture. We usually throw a huge party and all the works. But this frugal mama decided to DIY the party, invite a few close friends and let the kids be kids (like, what’s new, right?)

Our party food was pretty much the usual. Spaghetti, Spring rolls, Fried Chicken and Fries. I made some cake pops, candy-coated Oreos and some cupcakes. The cupcake recipe is the same as the chocolate cake used for Adam’s birthday. 🙂
I used a different recipe for the cake this time coz I wanted to have a white base since it will be a unicorn. This is the first time I will be making a unicorn cake and I didn’t want an overly complicated design so I used buttercream and some fondant. I followed Rosanna Pansino’s recipe for this cake.
My cake lacked a bit of height but it was a hit with the kids. Here’s a funny story:
I did the fondant parts two nights before the party so they have time to harden a little. When I arrived home from work, ready to start making the other parts of the cake, I found out that Blake ate one of the ears! She thought it was not needed. That meant I had to redo the ears and I was running out of time. 😀
I had fun doing the unicorn cake by myself. Although it was very tiring because I can only do bit and pieces of it after work. Also, because this is a first, I hit a few bumps along the way. But all is well and its a big achievement for me to make my kids their own birthday cakes. I think this is going to be a start of a tradition 🙂
Since we did not have a grand celebration, we did have a special staycation at Lapita Hotel and went to Motiongate Dubai (Dubai Parks), just us 4. It’s all about making memories after all.
